LSL {Foodie Friday} - 4th of July Fun

Happy Friday! And Happy almost 4th of July! What are your plans this coming weekend/week? Going away to Tahoe to gallivant on a boat? Camping on the coast? BBQs all week? Or are you one of the few of us that have to work most of next week? Well, at least we still have our weekends. #silverlining

LSL {Foodie Friday} - Pie in a Jar

Happy Memorial Day weekend! God, how I love long weekends. Something about having that extra day makes Sunday so much of a happier day. Don't get me wrong, I am completely appreciative of both my weekend days, but sometimes Sunday seems a little too close to Monday morning. However, now with this Monday off, two Saturdays are better than one.  

This Foodie Friday I thought I would try an American tradition on this Americana Holiday. And to me, that is synonymous with pie. Sweet, sweet pie. This version is a little different, so if you have some extra mason jars lying around...let's put them to good use this weekend with Babble's Blueberry and Cherry Pie recipes.


Blueberry and Cherry Pies in a Jar

Serves: 8-10, 4 oz. pies

For the crust

2 cups plus
2 tablespoons unbleached all-purpose flour

1/2 teaspoon salt

2 tablespoons sugar

12 tablespoons cold butter

1/2 cup ice water

Combine the flour, salt, and sugar in the bowl of a food processor. Quickly chop up the butter, and pulse it into flour mixture, 5 or 6 times. Drizzle in ice water, pulsing 2 or 3 times, just until the dough is combined.

Dump dough onto a lightly floured surface and gather into a ball. Divide into 2, flatten dough into discs, and wrap each one tightly with plastic wrap. Chill for at least a half-hour in the refrigerator. Meanwhile prepare the fillings.

For the blueberry filling

Makes 4-5, 4 oz. pies
3 cups blueberries

zest of 1 lemon

2 tablespoons lemon juice

1/4 cup sugar, plus more for top of pie

big pinch salt

1 tablespoon ground instant tapioca (I use my coffee grinder)

In a medium saucepan, heat 1 1/2 cups blueberries, zest and juice over medium-high heat. Stir frequently, and allow the sauce to reduce a bit, until it coats the back of a spoon. Cook for about 10 minutes. Remove from heat, and combine in a medium bowl with the fresh berries, sugar, salt, and tapioca. Set aside while you prepare the crust.

For the cherry filling

Makes 4-5, 4 oz. pies
3 cups cherries, pitted and halved

zest of 1 lemon

2 tablespoons lemon juice

1/4 cup sugar, plus more for top of pie

big pinch salt

1 tablespoon ground tapioca

In a medium bowl, toss all of the ingredients together. Set aside while you prepare the crust. Preheat the oven to 400 degrees, and place a rimmed baking sheet in the oven to preheat as well. Liberally butter 8 – 10 4 oz. glass canning jars.

On a lightly floured surface, roll out one of the dough discs. For the bottom crusts, cut out a 5” square, and press into the jar. For the tops, use a jar to press out a circle. Use the scraps to cut out the stars with a tiny star cookie cutter. Spoon in 4 tablespoons or so of filling, press top crust into place, and crimp edges with a fork or your fingers. Add the star, and make 4 very small incisions in the top of the dough to vent. Sprinkle the top of each pie with 1/2 teaspoon or so of sugar. 

Place prepared pies onto heated cookie sheet, and bake at 400 degrees for 20 minutes. Turn the cookie sheet, turn the heat down to 350 degrees, and bake for another 10 – 15 minutes, until crust is light golden and filling is bubbling vigorously.

Allow pies to cool completely and serve, or keep covered with a lid for up to three days


I realize this recipe is a little, okay, a lot more complex than my usual ones, but thought this could be a festive dessert to try and bring to a BBQ that you may be having this weekend. Or if you're going camping, these pack away nice and easily.

LSL {Foodie Friday} - St. Patty's Day Cake


Wow! St. Patrick's Day is here. (well, in about 12 hours) I'm still getting over that February has ended and we're already in the middle of March. Where does the time go? Really. Can someone please tell me. 

This year St. P's day falls on a Saturday and I love that there's an official day dedicated to wearing green, but more importantly, an official day dedicated to drinking green beer. All day. Instead of giving you more beverage ideas, I thought I would share this colorful green cake masterpiece with you from Amanda of I Am Baker. I am a huge fan of anything ombre colored, so when I saw this beauty I had to learn how it's done. And, it's really simple, apparently it's this thing they call food coloring that does the trick. Who knew? (Kidding, by the way) Amanda's just used her white cake recipe (or really, any white cake recipe will do) and gradually added more drops of green coloring to each layer. 

My Foodie Friday tip this week: bake this bad boy up tonight so that you have something sweet to snack on when you get home late tomorrow night. (wink) Amanda's white cake recipe can be found here and the post that shows how she made the above, very tasty looking cake, along with some tips in coloring, here.

Happy Valentine's Day

Happy Valentine's Day! Wishing you a super romantic, over-the-top, oohey-gooey day! Okay, so I'm not one of those girls that overly loves or really hates Valentine's Day, I'm in the middle of the road about it. I think the idea behind it is sweet enough and, in my book, a cute candy conversation heart never hurt anyone. Basically it's a free 'PDA day without the judgement' is all. Sure if making out in public floats your boat, well lucky you, today's the day!

Okay, isn't that bow darling? And those macarons look too good to eat. I have to say if a Valentine's date of mine ever got me that sweet xo necklace I would probably die a happy woman, serious swooning happening over here.

There is something magical about Christmas. I don't know if it's all the time with family, or eating all those extra Christmas treats, or even if it's listening to all that cheery music, but it's a nice time of year. And with a fresh start of New Year's just around the corner, it feel like it's a time of possibility.

LSL {Foodie Friday} - Eggnog Martini

It's officially the start of the Christmas weekend and nothing says Christmas more to me than a spiked eggnog drink. I do find it a little weird that this is the only time of year we are allowed to drink eggnog, so I figure why not make it a stiff one to celebrate the long holiday weekend.


Eggnog Martini
{Adapted by Miss Martha}
Yield
Serves 8

Ingredients
1 cup sugar
1/4 cup cornstarch
1 teaspoon ground nutmeg
1 teaspoon pumpkin-pie spice, plus more for garnish
8 cups whole milk
6 large egg yolks
3 cups brandy

Directions
1. Set a large fine-mesh sieve over a large bowl. Place bottom of bowl in an ice bath; set aside. Off heat, in a medium saucepan, whisk together sugar, cornstarch, nutmeg, and pumpkin-pie spice. Gradually whisk in 4 cups milk, taking care to incorporate the cornstarch. Whisk in egg yolks.

2. Whisking constantly, cook over medium heat until the first large bubble sputters, 10 to 12 minutes. Reduce heat to low; cook, whisking constantly, 1 minute more. Remove from heat; immediately pour through sieve into bowl. Stir in remaining 4 cups milk. Let cool completely in bowl still set in ice bath.

3. Just before serving, stir in brandy, and ladle into glasses; garnish with pumpkin-pie spice.

LSL {Foodie Friday} - Christmas in a Bowl

I love chocolate, I love brownies and I love peppermint. This Foodie Friday I found the best of all worlds; a recipe that includes chocolate, brownies and peppermint! Christmas in a Bowl. And it sounds fantastic. The Faux Martha created this delicious recipe and I definitely need to get to trying to make, so I can get to trying it. This may be a little more complex than most of the recipes featured here, but I believe it's well worth it for this Christmas treat.





Christmas in a Bowl

{adapted from The Faux Martha via Martha Stewart}
(note: trifle must rest 12 hours before serving)
Serves 20

MOUSSE

-2 1/2 c. heavy cream

-10 oz. white chocolate, coarsely chopped

-1/2 c. peppermint candies, crushed

PUDDING

-8 oz. dark chocolate, coarsely chopped

-2 c. heavy cream

-3 large egg yolks, room temperature

BROWNIES

-1/2 c. (1 stick) unsalted butter

-8 oz. dark chocolate, coarsely chopped

-1 1/2 c. sugar

-4 large eggs

-1 tsp. pure vanilla extract

-3/4 c. all-purpose unbleached flour

-1/2 tsp. sea salt

GARNISH
1/4 c. peppermint candies, crushed

1. Make the mousse: Prepare an ice-water bath; set aside. Place white chocolate in a bowl. Bring 1 cup cream almost to a boil in a small saucepan. Pour cream over chocolate and stir until smooth. Set in ice-water bath. Let cool, stirring occasionally, until thick enough to hold ribbons on surface, about 15 minutes. Beat remaining 1 1/2 cups of cream to nearly stiff peaks. Fold into chocolate mixture until smooth, then fold in candies. Cover with plastic wrap, and refrigerate until thickened and almost firm, 4 to 6 hours.


2. Make the pudding: Put chocolate into a large bowl; set aside. Bring cream almost to a boil in a small saucepan. Whisk yolks in a bowl. Pour 1/2 cup of hot cream in to the eggs in a slow, steady stream, whisking constantly to temper the eggs. Pour mixture back into pan, whisk well. Cook over medium heat, stirring, until thick enough to coat the back of a spoon, about 2 minutes. Pour over chocolate; whisk until smooth. Set bowl in ice-water bath. Let cool, stirring occasionally, until thick enough to hold ribbons on surface, about 15 minutes. Place plastic wrap directly on surface; refrigerate until set, about 3 hours.


3. Make the brownies: Preheat oven to 350°. Line an 8-inch square baking pan or heatproof glass dishpan
with overlapping parchment paper, leaving a 1-inch overhang. Set aside. Place butter and chocolate in a double boiler or large heatproof bowl set over (but not touching) simmering water; stir frequently until chocolate and butter are melted, about 7 minutes. Remove bowl from heat; let cool to room temperature, 10 to 15 minutes.
Stir sugar into cooled chocolate mixture until combined. Whisk in eggs one at a time, whisking until smooth after each addition. Whisk in vanilla. Gently fold in flour and salt. Pour batter into prepared pan, and smooth top with an offset spatula. Bake until cake tester inserted in the center comes out with only a few moist crumbs attached, 40 to 45 minutes. They will be fudgy. Using parchment, lift brownies out of pan and onto a wire rack to cool completely.


4. Assembly: Spread one-third of the mousse into bottom of a glass trifle bowl that is 8 to 10 inches in diameter. Crumble brownies, and top with 1/2 of the brownies. Top with half the pudding, then another third of mousse. Place remaining brownie crumbles on top. Top with remaining pudding, then mousse. Cover with plastic wrap, and refrigerate 12 hours. Garnish with peppermint candies just before serving.


Faux Martha puts it into words nicely about her Christmas in a Bowl, "...don’t judge her book by the cover. You wont be able to put her down. And when you’re done, you’ll wish there was more."  It might not be the prettiest dessert in the book, but it sounds like one of the tastiest. Girly Gift Ideas

Now that it's mid-December and the Christmas shopping (at least for most people) is under way. I am completely stressing myself out thinking of what to get people and it's now December 14th and I have done very little gift shopping. Yikes! So while procrastinating attempting to find the perfect gifts for my favorite friends and family, I was looking at my dailys to see what my favorite bloggers recommend. It seems like gift guides are all over and I have to say, in true LSL fashion, I am coveting most items. But my favorite and most extravagant gift guide is by the lovely Mrs. Lilien.
